Joe Lundberg's Fruitcake Recipe!  YUM!


16 oz. Mixed fruits and peels

8 oz. glaced red cherries

8 oz. glaced green cherries

8 oz. glaced pineapple

1 pound box of raisins

2 1/4 cups chopped nuts (I use pecans)

1/2 cup grape juice

2 cups brown sugar

1 cup soft butter/margarine

5 eggs

1 tsp. almond extract

2 cups flour

1/2 tsp. cinnamon

1/2 tsp. mace

1/2 tsp. baking soda

Chop cherries and pineapple, toss into a large mixing bowl with mixed fruits and peels, chopped nuts, and raisins. Mix with grape juice thoroughly. Set aside and let sit for one hour.

Mix brown sugar and butter thoroughly in a separate bowl. Beat in eggs and almond extract.

In another bowl, sift together flour, cinnamon, mace, and baking soda. Blend this mixture into the brown sugar/butter/eggs/extract mix. Then mix this batter into the fruit mixture.

Turn batter into a greased 10" tube pan lined with wax paper (or separate equally into three aluminum loaf pans) Press lightly. Bake in 275 degree oven for about 3 hours and 20 minutes, or until firm and evenly brown.

Remove from oven; let stand on cooling rack for an hour. Turn cake (or loaves) out and let cool thoroughly (may take several hours!) Wrap cake up in grape juice-soaked cheesecloth to keep it moist and prevent the outside from hardening. Store in air tight container if available.

P. S.  I use a one pound box of raisins. It seems like a lot, but I like raisins, and it is a BIG CAKE. If you want to put less in, that's fine. As for the nuts, it's 2 1/4 cups of whatever nuts you choose. You don't have to put them in if you don't want to, either!
